Big-Batch Dinner For you and your Gang.

Simple and tasty dishes to feed the friends and family during the season of entertaining. Cooking for a crowd, be it a large family gathering or a dinner party, can be a bit of a challenge. Most dishes are scaled to yield four to six servings, and while many can be doubled with some basic math.

Spaghetti

Spaghetti and meatballs is always a winner. Pork mince with just a few other ingredients to make them delicious. The tomato sauce with fresh basil and balsamic vinegar helps balance the flavours.This sunflower seed pate can be made in five minutes. The texture is a little coarse and it goes well with crisp vegetables and crackers  and a glass of wine or cold beer.

 

2. Tamarind and horseradish ribs

These ribs need to be slowly cooked until succulent and tender, ready to be eaten with fingers after adding a spoonful of tasty salsa. Fresh corn is the taste of sunshine. Boil it for five minutes and slice off the kernels for the salsa.

 

3. Fennel and Gruyere Arancini balls

Fennel provides a subtle surprise flavour and crunch alongside the oozy gruyere cheese in these delicious deep-fried arancini balls. Serve with aioli for a creamy dip.

Bring stock to a very low simmer in a saucepan. Meanwhile, heat oil and butter in a saucepan over medium heat, add fennel bulb, onion and garlic and stir occasionally until soft and transulcent (7-10 minutes). Add rice, stir frequently to toast and coat in oil (3-4 minutes), add Pernod and wine and stir frequently until evaporated (1-2 minutes). Add stock one ladleful at a time, stirring and adding more stock as it’s absorbed, until all stock is used and rice is creamy and just cooked through (25-30 minutes). Remove from heat, stir through lemon juice and rind, and season to taste.
